La Paella Cabanesa®: exceptional by origin, by flavour, and by destination.
In gastronomy, there are truths that don't need to shout to be heard:
There is only one Valencian paella®.
There is only one Paella Cabanesa®.
And then… come all the other rice dishes.
At Chiringuito Los Pinares®, in the Ría de Ares and under the playful gaze of Madalena beach, rice dishes are not just a dish: they are a ritual.
A way of understanding the sea, the land, and tradition with almost religious respect.
Our seafood rice dishes —the Paella Cabanesa®, the Squid Ink Black, the Seaweed Green, and the Marine Plankton— are born from a slow-simmering broth, a sofrito that tells stories, and produce that is non-negotiable.
Every grain tastes of the fish market, of salty wind, and of that humble pride that only true, home-style cooking can convey.
Some dishes are born for one hand… and others ask for several.
Gastronomy has its own natural logic:
A hamburger, a kebab, or a burrito are conceived to be held with two hands and eaten in happy solitude.
But a paella is something else.
A paella calls for company.
It calls for a long table.
It calls for conversation, for shared spoons going in and out, for laughter breaking through the steam.
A paella is, by nature, a dish to share.
But… what happens when everyone at a table wants different things?
That's where tradition meets innovation.
That's where, while many restaurants complicate things, we solve them.
At Chiringuito Los Pinares®, we solve it in three ways:
1. Individual paella pans for those who want their own rice, their own way, and their own story in solitude.
2. Large paella pans for sharing, which arrive at the table with a flourish and goosebumps.
3. The Multigusto Paella pan, our most practical and celebrated invention:
three different paellas in the same pan.
Cabanesa®, Black, and Green… coexisting like good neighbours.
Because some groups come to try them all.
And we open the door for them.
The right wait for a worthwhile result
A serious rice dish is not improvised.
That's why our paellas take exactly 25 minutes:
The time the broth needs to embrace the grain, the time it takes to order a cold drink, the perfect time to share a starter while enjoying the views of La Madalena.
The Cabanesa® is not just a dish: it's a symbol.
It has its own name, registered and protected by the Patent and Trademark Office: M4181355.
It's not ‘just any rice dish’ or a copy of Valencia. It's a unique dish, with its own recipe and DNA, born in the Ría de Ares and created in Los Pinares.
To call it just ‘rice’ with cockles would be like calling ‘white wine’ Albariño or Galician pie simply ‘savoury tart’. No: the authentic has a surname and a flag.
The word paella refers to the cooking format (paellera) and the tradition of cooking rice this way. What makes the difference is the surname: Cabanesa®, which makes it unrepeatable anywhere else.
